Weeknight Healthy Burger Recipe

If you’ve been following us on Instagram, you’ll know by now that all of our June boxes are going out early next week, and that both the Jumbo box and the Mini box include some flavoursome Mingle Seasoning. We’ve been reading over their blog, drooling at some of their recipes, and we just had to share their weeknight healthy burger recipe. If you have a little extra time to spare, you can even make some sweet potato burger buns. Now for the recipe…

Spicy Turkey Healthy Burger Patty

Serves 4

Ingredients

500g turkey mince
Mingle Seasoning (the Sofia blend is a good one if you like your burgers spicy!)
1 zucchini
Olive oil or coconut oil, for frying

Method

  1. ‚In a large bowl, grate the zucchini. Drain any moisture out.
  2. Mix together the turkey mince and two big sprinkles of the Mingle seasoning. Combine well with your hands, then shape into 4 flat burger patties.
  3. Heat the oil in a frying pan over a high heat, then cook the burgers for 4-5 mins each side or until cooked through.
  4. You can eat the patties with a salad or swap your burger bun for the sweet potato patties below and include fillings such as lettuce leaves, egg, tomato and beetroot.

Sweet Potato Patties

Serves 4

Ingredients

1 egg
1 medium sweet potato
Mingle Seasoning (their Siena blend is great for this recipe)
1/4 cup wholemeal flour
Olive oil or coconut oil, for frying

Method

  1. ‚Peel sweet potato and grate into a bowl. Try to drain out any excess moisture from the sweet potato.
  2. Add to the bowl flour, egg and a big shake of Mingle Seasoning. Mix well.
  3. Add oil to a pan and heat over medium heat. Place large spoonfuls of the fritter mixture into pan and flatten out slightly.
  4. Fry for 4 minutes each side, until golden and crisp.
  5. Remove from the pan and then it is time to stack your burger!
